Ingredients

To make these alternative Tuscan cookies you will need:

  • 130 g dates

  • 80 ml soy milk

  • 20 g ghee (clarified butter)

  • 50 g almond flour

  • 140 g gluten-free flour

  • 1 pinch of baking ammonia for sweets

  • 15 g unsweetened cocoa powder

  • Pistacchi q.b. you can use our Pistacchi interi sgusciati or Pistachio Granules)

Instructions: How to Prepare Pistachio Cantucci Step by Step

Follow these steps to bring crispy, fragrant, and healthy cookies to the table:

  1. Soaking and base: Leave the dates to soak in the soy milk for about 3 hours. Once the time has passed, blend them together with the milk until you get a smooth cream, then add the ghee (previously melted in the microwave to make it liquid).

  2. Combining dry ingredients: Add the unsweetened cocoa powder and almond flour to the cream, starting to knead carefully.

  3. Forming the dough: Gradually add the gluten-free flour and pistachios (the more you add, the better the flavor and crunchiness will be), continuing to work the dough until you form a homogeneous and compact loaf.

  4. Resting: Wrap the loaf and let it rest in the fridge for about 30 minutes.

  5. Cooking (First phase): Take the loaf out, turn on the static oven to 180°C. Shape the dough into a log, place it on a baking sheet covered with parchment paper, and pre-mark the cut lines on the surface. Bake for about 30 minutes.

  6. Cutting and second baking: Take the roll out of the oven, cut it diagonally to obtain the classic cantucci. Arrange them well-spaced on the baking sheet and put them back in the oven for another 15 minutes to make them perfectly crispy.

  7. Serving: Take out of the oven, let them cool, and enjoy your healthy cantucci. Buon appetito!
