Instructions: How to Prepare Stuffed Calamari with Pistachio Step by Step
Follow these steps to make a chef-quality seafood dish right at home:
-
Cleaning the calamari: Clean the calamari under running water. Gently pull the head away from the body and set it aside. Pull out the transparent cartilage quill from the inside, rinse the pouch, and remove the entrails. Remove the outer skin.
-
Prepare the tentacles: Separate the head from the tentacles by cutting just below the eyes and finely chop the tentacles with a knife. Set the calamari pouches aside.
-
Cook the filling: Cut the breadcrumb into very small cubes. Heat a drizzle of oil in a pan with a clove of garlic, add the chopped tentacles and shrimp, and sauté everything for 2–3 minutes. Add the breadcrumbs and deglaze with white wine. Let the seasoning absorb well and allow it to cool.
-
Assemble the filling: In a bowl, combine the cooked bread and fish mixture, grated Parmesan, chopped parsley, Pistachio Granules, beaten egg, salt, and pepper. Knead with your hands to blend all the ingredients well.
-
Stuff the calamari: Fill the calamari pouches with the prepared filling, fold the edges over, and close the opening using a wooden toothpick.
-
Breading: Lightly pass each stuffed calamari in olive oil and then coat it generously with pistachio granules or flour.
-
Cooking: Arrange the calamari in a baking dish and bake in a preheated oven at 180°C for about 20 minutes, until they are thoroughly cooked and golden on the surface.
-
Take them out of the oven, let them cool slightly, and serve your stuffed calamari with pistachio. Buon Appetito!
